Primarily, the dough used for the gyoza was a thick pastry dough seemingly flavored with cinnamon and sugar. The pork belly in the ramen had a similarly seasoned bark. Think cinnamon toast crunch flavor. Not inedible by any means, but definitely took away from what was otherwise a delicious bowl of ramen. Otherwise excellent textures, flavors, and spiciness.Our server was very friendly and knowledgeable when she was serving us, but the service itself was lacking. Drinks took a long time to come out, appetizers all came out at different times, & then another wait for the check. Again, staff were super nice but just off tempo.I'd go back for the ramen itself, but I'd skip the meat & apps.

The pork belly was still crispy, the mushrooms were savory, the noodles had an excellent chew, and the broth was something I wish I could bottle and save forever.The roasted duck bao bun was similarly delicious with a slight sweetness and a slow building heat that kicked things off perfectly. I really can't say enough positive things about 1981. Delicious and worth it.

Either make a reservation, or try to beat the dinner rush.They offered a good IPA from Bent Water, local. We ordered a Japanese pancake to start. Honestly I could've been satisfied with this for my whole meal - it's that good.I ordered the veggie ramen, mildly spiced. It was spiced for flavor, any more and it would've been too much heat for me.The hostess and server were incredibly friendly and had a great sense of urgency.We'll be back for more apps.
