How can you not rate this at 5 star. The experience overall was superb. Not a major wait time. Personalized sushi chef serving up succulent treats. The freshness, the exotic selection, the robust sake menu. I could visit such a place everyday. The red snapper sashimi and Spanish mackerel sushi were standouts. Of course the rolls are out of this world. Will 10/10 come back when I’m back in town. Alas I’m just a tourist who must return to my small hometown where such quality doesn’t exist. Oh well.

My wife's favorite was the salmon sashimi with truffle ponzu and the spicy tuna with shrimp katsu hand roll. My favorite was the akami zuke and the unister. The unister was the most expensive thing we ordered coming in at $18 but it was worth it... Uni, ikura, oyster with 24k gold flakes. An $18 bite but man was that good. The fishy oyster, then the savory uni, and finally the umami from the bursting ikura. Nothing fishy by the end of the bite. The hand rolls are delicious with crispy seaweed - something I've never experienced, usually the seaweed is already absorbing the moisture from the rice and sashimi and you can't truly enjoy the crisp nori flavor. The salmon belly is also noteworthy and the crab hand roll was delicious with actual crab, not just imitation. Lastly, get there early. We arrived 40 minutes before opening and we're numbers 5 and 6 in line. By the time opening came, there were 30 people in line with only 25 seats at the bar available. Umai!

The chefs are very attentive; only delivering your next order once you have finished your current sushi so it's as fresh as possible. The wait staff is great as well. Get there at open as the restaurant only seats 25 at a time, or be prepared to wait. The wait would be worth it though, for sure. Tasting top: if you are a fan of salmon belly I highly suggest you try the black cod. Prepared the same way, it's like salmon belly stepped up a notch. Enjoy!

We placed our names on the list, and were seated around 8pm. The food quality and freshness are worth every minute of the wait. With authentic atmosphere of Hatsuyuki and high quality food, we will definitely return.

From visualizing the cuts, to how they are properly seasoned/dressed and to the temp control of the protein throughout the process. They pair flavors well and they consistently change their specials so you’ll always find something seasonal. Simple and pure w/ no artificial additives. For those want to embark on a really good Japanese beer? Kyoto yuzu or white owl is a high recommend. For the cold side, Unister and Madai carpaccio hit home for me. Eat well friends 🤙
