The menu was more for reference. The ramen was pretty good. We also loved our server. She was friendly and super sweet whenever we ask for anything.Pro Tip: For taste, don't choose the lite option for broth, especially for miso. I made this mistake and the broth came out pretty plain and diluted with little flavor. My partner got normal and it was much better.* Karaage 4.5/5 - The fried chicken came out piping hot and fresh. The outside was crispy and scrumptious. The inside was super juicy. It was a bit light in flavor, though. You will want to dip it in the accompanying sauce which was a combination of sweet chili sauce and a sauce that looked like spicy mayo (but lighter and not as good).* Spicy Miso Ramen 5/5 - The normal spicy miso ramen had great flavor. It came with a half boiled egg, bean sprouts, corn, and butter on the side. The spiciness was between mild and medium. Get the wavy noodles. They're thicker than the straight noodles, so there's more of a bite. The chashu pork was thinly cut and had a charred flavor while still being tender.

Apr 09, 2025 · Mary Nelson🍜 toyama black🗓️ 02/2025I find myself coming back to Kashiwa every other week because they consistently pump out so many interesting specials 🫡 This time is a @kashiwaramen_oc x @shimamotonoodle collab with their take on Toyama Black.The soup was a delicious chicken chintan paired with a dark soy sauce tare to produce this striking hue on the soup. One sip of the soup, and it's incredible how bold and caramelly the profile of this shoyu was. It's a flavor that echoes the origins of Toyama Black itself. Initially created to provide a high salt content for laborers rebuilding the region, the intensely dark soy sauce broth was a staple for those needing to replenish their energy. Many might understandably shy away from the perceived salinity of such a concentrated shoyu on its own. However, I think the salt level was just right when paired with the noodles that Shimamoto-san provided, which were thin and straight this time around. These strands came with a firm but decent chewy bite, and the gloss on their surface made for a fantastic slurping experience 🙂↕️Pork chashu was my choice of protein here. While I still think the torching dried out the surface a bit for my liking, it imbued a slightly smoky character into the broth that harmonized beautifully with the tare. Black pepper was also provided on the side, which plays a significant role in many interpretations of Toyama Black. Now that we live in Anaheim, I was excited to learn that Baker St was colloquially known as Ramen Row, so we've been making our rounds and Kashiwa is our first choice so far (in OC ... Annex remains our #1 permanently). Tonkotsu broth is porky, fatty, bold, oily. Love that we can build our own ramen, but the signature bowls are also tasty and well balanced. Has connections to Totto Ramen and Hide-chan Ramen in NYC.
