Downtown Santa Ana offers various parking solutions, including street parking and several public parking structures nearby. While urban parking can sometimes require a bit of navigation, the area's ongoing revitalization means improved accessibility for visitors. Its central location makes Omakase by Gino easily reachable for residents across Santa Ana and from surrounding Orange County cities like Irvine, Orange, and Tustin. Omakase by Gino offers a highly specialized and exclusive dining experience centered around its signature omakase format. Here's a breakdown of their unique services:
- Intimate Omakase Dining: The core service is an intimate, multi-course omakase (chef's choice) experience, typically comprising around 19 meticulously crafted dishes. This allows guests to entrust their meal entirely to Chef Gino's expertise.
- Limited Seating & Personal Attention: The restaurant features a small, intimate setting, reportedly with seating for only 10 guests. This limited capacity ensures that each diner receives exceptional, personalized attention directly from Chef Gino and his small team.
- Set Seating Times: To maintain the quality and flow of the omakase experience, Omakase by Gino operates with two set seating times per evening, usually at 5:30 PM and 8:00 PM, from Wednesday to Saturday.
- Reservation-Only Dining: Given its exclusive nature and limited seating, reservations are absolutely essential and highly sought after. They typically open reservations a month in advance (e.g., on the second Sunday of each month via Resy.com).
- Chef-Curated Menu: There is no à la carte menu. The courses are entirely selected and prepared by Chef Gino based on the freshest seasonal ingredients, often flown in daily from places like Tsukiji Fish Market in Tokyo, Japan.
- Diverse Course Progression: An omakase journey includes a thoughtful progression of dishes, often starting with appetizers (e.g., Uni Pasta, Oyster with Caviar, Ankimo pate), followed by a sashimi plate, multiple pieces of nigiri sushi (often 9 pieces, including bluefin tuna and ocean trout), two owan (soup dishes), and concluding with dessert.
- Beverage Pairings: While not always explicitly detailed as formal pairings, the restaurant offers a curated selection of beer and wine that are chosen to complement the intricate flavors of the omakase courses.
- Educational Interaction: Chef Gino often interacts with diners, explaining each dish as it's made and providing insights into the ingredients and preparation techniques, enhancing the educational aspect of the meal.
Omakase by Gino is celebrated for numerous distinctive features that make it a standout in the Orange County fine dining scene:
- Mouthwatering, Melt-in-Your-Mouth Fish: The quality of the fish is consistently highlighted, with customers describing it as "mouthwatering" and literally "melted in your mouth." This speaks volumes about the freshness and expert preparation.
- Exceptional Chef Gino's Expertise: Chef Gino Choi is the heart of the experience. His 20+ years of culinary experience, rooted in traditional Japanese techniques and honed with innovative twists, ensure every dish is a "culinary mastery." Customers praise his "friendly but focused manner" and the "palpable joy" he brings.
- Innovative Yet Authentic Dishes: While deeply rooted in Japanese tradition, Chef Gino incorporates creative elements. Signature dishes like the "Uni Pasta" (Japanese Sea Urchin pasta) reflect his "innovative yet authentic approach," blending traditional flavors with culinary artistry. Other unique creations include spiny lobster carbonara with foie gras.
- Intimate & Immersive Setting: The small, counter-style seating (often for 10 people) creates a highly intimate and immersive experience where diners can watch Chef Gino prepare each course directly in front of them, fostering a unique connection. The decor features "historic brick walls and a wooden bar-style seating arrangement."
- Consistently Delicious Food: Patrons repeatedly describe the food as "absolutely delicious" and "great," with many asserting that the "omakase experience beats the one I had in Japan!" and that "everything is top quality."
- Fresh Daily Ingredients: A key highlight is the commitment to "fresh daily" ingredients, with fish often flown in each day from the renowned Tsukiji Fish Market in Tokyo, Japan, ensuring peak freshness and flavor.
- Attentive and Personalized Service: Despite the chef often working solo (or with one server), the service is consistently rated as "great" and attentive, making each guest feel welcomed and well-cared for.
- Unique Course Progression: The 19-course journey is thoughtfully designed to build flavors and textures, making each bite a "perfect symphony of flavors" and a "not-to-be-missed experience."
Given the exclusive and high-demand nature of Omakase by Gino, traditional "promotions" in the sense of discounts are rare. The value lies in the curated, premium experience itself. However, there are aspects that can be considered special offerings:
- Curated 19-Course Omakase Journey: This is the primary "offer" – a set multi-course tasting menu (currently priced around $200-$250 per person, though prices can change) that represents the chef's best work and the peak of seasonal ingredients. This fixed price ensures transparency for such a high-end experience.
- The "Experience" Itself: The intimate setting, direct interaction with Chef Gino, and the educational aspect of learning about the dishes and ingredients are intrinsic values that elevate the meal beyond just food.
- Seasonal Menu Changes: The menu changes approximately every three weeks and is seasonal, ensuring that repeat customers always have a fresh and evolving culinary experience to look forward to, encouraging frequent visits for "another treat soon."
- Giftly Gift Cards: The availability of Giftly gift cards allows individuals to gift this unique experience, suggesting a value in sharing such a memorable meal.
Due to its high demand and limited seating, Omakase by Gino focuses on delivering consistent, exceptional quality rather than frequent discounts. Booking well in advance (reservations often sell out quickly) is key to securing a spot.

Feb 18, 2024 · Coco Loves DogsWhat a lovely chef, and an unbelievable meal. This was one of the best restaurant experiences I’ve had in my entire life. The service was attentive, the food thoughtful and inspired, the atmosphere comfortable and clean. On its own, the menu was incredible. Every single plate was well-described and beautifully prepared. I may never recover. And Gino… was LOVELY. I have met many chefs, and dined in fine-dining/Michelin-quality restaurants around the world. This was a superior experience. Gino was knowledgeable, kind, and friendly in a way that is truly rare. We would have come back for the food alone, but Gino made it a memory and an experience. He also personally (and kindly) chased us down to return my purse — the food was so good that I completely forgot it.Thank you — from a couple of new Canadian transplants who felt infinitely welcomed and well-fed.
