However they’ve severely reduced the individual size of their sushi - from around 210 grains of rice to maybe 175 grains or less, and fish sliced almost see-through thin. Then raised prices on the reduced size. Sushi has very strict standards - 247 grains of rice and minimum 3.5 to 4 grams of fish per standard nigiri. If you’re not even coming close, then what are you really selling? Just raise the price some more and make something closer to standard sushi/sashimi
