California Shabu Shabu specializes in providing a premium shabu-shabu experience, allowing diners to cook their own selection of high-quality meats and fresh vegetables in flavorful broths. Here's a detailed look at their offerings:
- Interactive Shabu-Shabu Dining: At the core of the experience, diners cook thinly sliced meats and fresh vegetables in a personal hot pot at their table. This interactive method allows for complete control over the cooking process and creates a fun, communal dining atmosphere.
- Premium Meat Selection: The restaurant offers a variety of high-quality meats, including:
- Prime Rib Eye: Praised for being "beautifully marbled, super soft, and delicious."
- Choice Rib Eye: Surprisingly, some patrons have preferred this for its tenderness and softness.
- Pork Belly: Noted for its quality, tenderness, and softness.
- Other options often include Kobe Beef Rib Eye, Center Cut Pork Tenderloin, Boneless Chicken Breast, Beef Belly, and Japanese A5 Wagyu (market price).
- Authentic Broth Options: The foundation of the shabu-shabu experience. Their broths are highly lauded, particularly:
- Sukiyaki Broth: Described as "to die for" and truly authentic, reminiscent of traditional Japanese sukiyaki.
- Traditional Kombu Broth: A classic, light seaweed-based broth.
- Spicy Miso Broth: For those who enjoy a bit of heat.
- Tonkotsu Creamy Pork Broth: A rich and hearty option.
- Creamy Chicken Broth: A light, creamy, and flavorful choice.
- Tomato Broth: A bright and tangy unique option.
- Fresh Vegetable Plates: A "cornucopia of seasonal veggies" including spinach, mushrooms, kabocha squash, white onions, tofu, and broccoli, ensuring a balanced and nutritious meal.
- Signature Dipping Sauces and Condiments: They provide essential dipping sauces like Ponzu (citrus-based soy sauce, praised as "the best around") and Goma (sesame and peanut-based sauce). Diners can customize their flavors with various condiments, including pressed garlic, green onions, white radish, and "hot drops" for an extra spicy kick.
- Complimentary Ramen/Udon Finish: A delightful bonus where diners can request a complimentary bowl of kombu soy sauce at the end to enjoy with their ramen or udon noodles cooked in the flavorful broth, a "nice mini treat."
- Beverage Menu: A selection of Japanese beers (Sapporo, Kirin Ichiban, Asahi, Orion), sake (various types including Nigori, Junmai Ginjo, Junmai Daiginjo), wines, and non-alcoholic beverages (sodas, iced teas, Calpico).
- Dine-In Service: The restaurant features a bright, clean, and well-organized setup, offering a comfortable and enjoyable dine-in experience.
- Takeout Services: Available for those who prefer to enjoy their shabu-shabu at home.
California Shabu Shabu stands out for several key features that contribute to its exceptional reputation among locals:
- Authentic Sukiyaki Broth: A major draw, with customers specifically noting its genuine taste that rivals traditional sukiyaki found in Japan, unlike other places that fail to deliver.
- Exceptional Meat Quality: While premium meats are expected at shabu-shabu restaurants, patrons consistently praise the tenderness and flavor of California Shabu Shabu's various beef and pork options, sometimes even preferring the "choice" cuts over "prime."
- Super Friendly and Attentive Servers: The staff receives high praise for their warmth, attentiveness, and ability to remember regular customers, creating a highly personalized and welcoming dining experience.

- Perfectly Portioned Food: Customers appreciate that the portions are just right, providing a satisfying meal without being overwhelming.
- Customizable Experience: From choosing broths and meats to mixing personalized dipping sauces with a variety of condiments, diners have full control over their meal.
- Delicious Spicy Sauce Recommendation: The spicy sauce, especially when combined with the sesame/goma sauce, is a popular highlight for those who enjoy heat, though a warning is given about its potency!
- Complimentary Ramen at the End: The thoughtful gesture of offering a complimentary kombu soy sauce bowl to finish ramen cooked in the remaining broth is a unique and appreciated touch.

California Shabu Shabu Reviews
the servers are super friendly and attentive! i came back here for the second time and they remembered me and my mom LOL the food is exceptional and perfectly portioned. has normal shabu business pricing, and their sukiyaki broth is to die for!!! it actually tastes like the authentic sukiyaki that I remember when i was in japan, unlike most other shabu places in the area that advertise sukiyaki but isnt actually sukiyaki…
Apr 25, 2025 · sheila tranLove how bright and clean the restaurant is. Nice setup as well. Most importantly, the meat quality was good. We opted for 3 different meat plates to try out (prime rib eye, choice rib eye, and pork belly), and all the meat quality was pretty good. Funny that we thought the prime rib eye would be the best, but we actually preferred the choice rib eye and pork belly better. So tender and soft. Loved that the veggies were crispy and fresh too.Service was fast and super friendly. I especially enjoyed the spicy sauce they recommended to try, it went so well with the sesame/goma sauce. It def added a good flavor to it. (Note: just one drop is enough. Only if you can handle heat really well, I tried two drops and it was quite spicy)Also, would recommend getting a complimentary bowl of kombu soy sauce from them, it was a nice mini treat to enjoy your ramen at the end of the meal. Enjoy!
Jun 25, 2023 · Christy EI love this place! We have been there a few times and we like it a lot. The owner is very nice and he showed me all the items on the menu and took the time to talk to us since we are from out of town. He asked us questions to see what kind of soup that would work for us and we ended up with the Sukiyaki soup and we loved it! We will be back any time we are in the area.
