KAEDE offers a unique and highly curated dining experience, setting it apart from typical sushi restaurants. Their primary focus is on Tasting Menus presented in the Japanese sushi kappo style, ensuring a cohesive and exceptional culinary journey. Here's a breakdown of their offerings:
Pre-Fixed Tasting Menus (Omakase-style): This is the cornerstone of the KAEDE experience. They do not offer an a la carte menu; instead, diners choose from two distinct tasting menus:
Sushi Counter Reservation (Tasting Menu $92 per person): This exclusive experience allows guests to sit at the sushi bar, directly observing Chef Shinji as he expertly prepares each piece. It's often likened to "watching art be made," offering an intimate and interactive encounter with the culinary process. Due to safety reasons, children are not accepted at the sushi counter.
Table Reservation (Petite Pre-Fixed Tasting Menu $80 per person): For those who prefer a table setting, this menu offers a slightly different, though equally exquisite, selection of dishes.
Exquisite Nigiri: The nigiri is consistently described as "perfect" and "next level," made with impeccably sourced fish, often flown in from Tokyo's Toyosu Market. This emphasis on quality and precise preparation is a hallmark of KAEDE.
Exceptional Appetizers: While the sushi is the star, the appetizers are not to be overlooked. Reviewers have raved about specific items like the "deep fried scallop" and a "thin, maki roll with tuna and green onion," describing them as "magical" and memorable.
Seasonal Cuisine: The tasting menus are designed around seasonal ingredients, ensuring freshness and variety throughout the year. This commitment to seasonality allows for a dynamic and evolving culinary offering.
Traditional Japanese Culinary Techniques: Many dishes in their tasting menus incorporate ingredients essential to Japanese cuisine, such as Dashi broth, soy sauce, and miso, reflecting a deep respect for traditional flavors and preparation methods.
Beverage Program: While specific details on a full bar are not extensively highlighted in customer reviews, the focus on a refined dining experience implies a thoughtfully curated beverage selection to complement the tasting menus, including sake options.
Reservation-Only Dining: To maintain the intimate atmosphere and ensure personalized service, KAEDE operates strictly by reservation. They do not accept walk-ins.

KAEDE's reputation as one of Portland's premier sushi destinations is built upon several distinctive features and highlights:
Unparalleled Fish Quality: This is arguably KAEDE's most celebrated feature. Diners consistently describe the fish as being of the highest quality, "next level," and so exceptional that it "ruins sushi anywhere else." The sourcing of fish, reportedly from places like Tokyo's Toyosu Market, underscores this commitment to excellence.
Chef's Counter Experience: Sitting at the sushi counter offers a unique and intimate experience. Customers relish "watching the chef expertly prepare everything," likening it to "watching art be made." This direct interaction and observation enhance the dining journey, allowing guests to appreciate the craftsmanship involved.
Exquisite Tasting Menus: The pre-fixed tasting menus are a highlight, offering a cohesive and perfectly balanced progression of dishes. The value for the quality received is frequently praised, with the tasting menu price being considered "great" given the caliber of the food.
Exceptional Service: The service is consistently lauded as "five star," "great," and highly attentive. The presence of Izumi Uehara as both a chef and the sole server ensures a personal and dedicated approach to guest experience, with diners appreciating her "sweet" demeanor and the joy of chatting with the chef.
Artistry in Presentation: Beyond taste, the preparation and presentation of each dish are often highlighted as beautiful and artistic, further elevating the dining experience.
Memorable Appetizers: While the nigiri is paramount, the appetizers receive significant praise, with items like the deep-fried scallop and the thin maki roll with tuna and green onion being called "magical" and "a favorite." This demonstrates the breadth of culinary excellence beyond just raw fish.
Intimate and Exclusive Atmosphere: The reservation-only policy and focus on tasting menus contribute to a refined and intimate dining environment. This makes for a special occasion destination or a truly immersive culinary escape.
Strong Local and Critical Acclaim: KAEDE has quickly garnered positive reception from various local publications, being described as a "scene stealer" and one of "Portland's 12 best sushi eateries," solidifying its reputation as a top-tier establishment in the city.

Given KAEDE's fine dining, tasting menu-focused approach, it generally does not offer traditional "promotions" or "special offers" in the same vein as more casual restaurants. Their value proposition lies in the exceptional quality of their ingredients, the artistry of their preparation, and the overall immersive dining experience at a competitive price point for high-end sushi.
Value of the Tasting Menu: The pre-fixed tasting menus at $92 (sushi counter) and $80 (table) per person are considered a great value for the extraordinary quality and quantity of food offered. This pricing structure inherently acts as their "special offer," providing access to premium ingredients and expert craftsmanship.
Seasonal Offerings: While not a discount, the menu's focus on seasonal ingredients means that the offerings naturally evolve. This provides a continuous "new" experience for returning patrons, highlighting the freshest available seafood and produce.
Supplement Menu: After the tasting menu, guests may have the option to add additional sushi pieces from a supplement menu, allowing for further customization of their dining experience if they desire more of a particular item.
As a high-demand, reservation-only establishment, their focus is on maintaining quality and exclusivity rather than driving traffic through discounts. For the most precise and up-to-date information on their menu and any unique offerings, direct consultation of their official website or reservation platform (Tock) is recommended.

KAEDE Reviews
phenomenal - only regret is ruining sushi anywhere else. Five star service and they need to forge more stars in the galaxy to edge the fish quality and taste high enough. Can't recommend enough - loved the chef's counter experience and watching the chef expertly prepare everything. It was like watching art be made. The nigiri was, of course, perfect, but don't sleep on the appetizers - the deep fried scallop was a favorite. The thin, maki roll with tuna and green onion was something magical, and it visits me in my dreams. Thank you so much for a perfect night!
Jan 23, 2025 · Hayley ReskAbsolutely incredible. The sushi is next level and the tasting menu price for the quality is great. The service was also great and the chef was so sweet and a joy to chat with at the sushi bar. Couldn’t recommend enough.
May 01, 2025 · Mary LeoneWell, that settles it. This place lived up to the hype. It's a bit steep on price, but you are tasting sushi as God intended. Highly recommend for purists and connoisseur only. If you're unfamiliar and haven't had real sushi before, avoid it because unless you visit Japan, you'll never experience this level of quality anywhere else.
Jan 30, 2025 · Frankie PalmeriAmazing nigiri omakase experience! The quality of the fish matched and even exceeded what I've been served at a Michelin star omakase restaurant in Tokyo. The nigiri have the chef's thoughtful personal touch and I found that these complemented the flavor of the fish very well and were not overpowering. We also really enjoyed the soft creamy chawanmushi that had the perfect amount of truffle and the monkfish karaage was fried to golden brown perfection. The waiter was also very kind, explained everything very well and gave us recommendations that really made the experience special. If you enjoy nigiri this restaurant is a must do experience. I highly recommend Kaede!
Nov 07, 2024 · William SimpsonSUPERIOR SUSHI SITUATIONIf you think you’ve found great sushi elsewhere in Portland you’re probably right, but you haven’t eaten the best until you’ve dined at Kaede. Owner/Chef Izumi Uehara and Executive sushi chef Shinji Uehara (wife & husband) have teamed up to bring you perfectly prepared fish flown in overnight from Japan for the fine people of Portland to enjoy in a Sushi-Kappon experience.Tips:- The premium nigiri is a MUST HAVE. Shinji showcases his fish in the most authentic way with little adornments such as jalapeño relish, yuzu jam, and whatnots. He is careful not to overwhelm the delicious melt-in-your-mouth fish with the extra bling he puts with each bite. His knife work is the best I’ve seen in Portland and it comes through in this elevated approach to sushi.- Try things you normally wouldn’t eat. I despise eggplant and NEVER want to take a second bite of anything related to the nightshade. The NASU AGEBITASHI is Uh May Zing and you will want to devour Chef Izumi’s clever creation.- Saba Battera is super special here and a steal at only $10 (now $12). This is the only place in Portland other than Murata where I’ve seen it on the menu and this rendition is exquisite.UPDATECame back a year later and it was even better than I remembered. The king salmon sunomono salad was soooo good that we had to order a second before dessert.
