July 31 · DaiTo preface my review, Kayava Belltown has just opened this past week, and I had the pleasure of eating there on the first night. They have a very limited menu at this time and are still adding to it, settling into Belltown, and may adjust things as they get set up for full opening.A very cute little shop. I enjoy the idea of having the garage style door that opens up fully in the evening, and it lets in a lot of ambience from outside. However, it lets in flies that counter that cozy atmosphere. I really recommend a magnetically clasping fly net if the shop is going to be open to the street.The service was excellent and extremely attentive, asking me questions regarding everything I'm talking about here like the food, atmosphere, etc. It was also very quick! I got my bowl within 10 minutes of ordering it.When it comes to the ramen itself, it's good. Currently, the shop only offers tonkotsu and chicken paitan. I opted for the chicken paitan this time and got an egg to go with it, which turned out to have been cooked sous vide. This did not lend itself well to the bowl, with a very loose white and a firmer yolk, and I'd rather a classic soft-boiled egg, if not a marinated one. The noodles were sapporo style and were perfectly cooked, not overly soft or dry. The broth itself was good as well. I am fairly sure that the shop does not use a broth and tare method (or at least only a shio tare), since I could not taste anything typically present in a tare (soy sauce, kombu, miso, etc.), and it wasn't mentioned to me when discussing the broth. It's an avenue that could be explored to add some more dimensions to the final bowl's flavor. Chashu, of course, was served with the soup. This time it was their pork chashu, although I did not know I could substitute in chicken chashu for it. It was very thinly sliced, which is a bit unusual, but this helps make the chashu very good and tender, and lets the soup cling to the meat. Definitely made the chashu more enjoyable to eat for me as opposed to other places. Lastly, I don't really see much of the point of adding in both green onion and red onion to the bowl. Especially since the red onion does not seem to have a strong flavor in this case. It seems like it adds more texture than flavor, and if that is the goal it could be better accomplished with other ingredients like wood ear mushrooms.This was a good bowl of ramen. $20 for one plus an egg might be a bit much for me, but as they open up and add more broths I look forward to coming back to this review to revise it.
