Menya Hanabi - The Original Nagoya Mazesoba Introduce
For those of us across California who appreciate the rich and diverse landscape of Japanese cuisine, there's a particular joy in discovering a restaurant that dares to be different. **Menya Hanabi - The Original Nagoya Mazesoba** in Arcadia stands out by specializing in a unique style of ramen that might surprise traditionalists: *mazesoba*. Unlike the more common soupy ramen bowls, mazesoba is a "brothless ramen" or "dry ramen" dish, where thick, chewy noodles are coated in a rich, umami-packed sauce and topped with a variety of flavorful ingredients. This distinctive approach offers a fresh perspective on ramen, inviting diners to experience a different side of Japanese noodle artistry.
Menya Hanabi originated in Nagoya, Japan, as the brainchild of Chef Naoto Niiyama, who sought to innovate within the ramen world. Inspired by "Taiwan ramen," he developed a dish where the emphasis is on the harmonious blending of toppings and sauce with the noodles, rather than a traditional broth. The "Original Nagoya Mazesoba" features spicy minced pork, vibrant green onions, chives, fragrant fish powder, savory seaweed, a hint of garlic, and a perfectly poached egg, all designed to be thoroughly mixed together before eating. This creates a deeply savory and textural experience, a true culinary adventure for your palate.
While some might be accustomed to ramen served in a steaming bowl of broth, Menya Hanabi encourages diners to embrace this alternative style. The experience is about mixing all the components to create a cohesive and rich "sauce" that clings to every noodle. Many customers have praised the intense flavors, noting the delicious combination of umami, savory, and sometimes spicy notes. Beyond the mazesoba, the restaurant also offers a selection of crispy fried appetizers, such as their juicy Karaage (deep-fried chicken) and flavorful Takoyaki, further enhancing the Japanese dining experience. It's a place that asks you to step outside your comfort zone, and for many, the reward is a truly satisfying and memorable meal.
It's worth noting that due to its popularity and unique offerings, Menya Hanabi can often draw long lines, especially during peak hours. This speaks to its growing reputation as a destination for those seeking something different in the vibrant California food scene. While the mazesoba style might not be for everyone, as some first-time visitors who are used to traditional broths have noted, it's certainly a culinary experience that's worth trying at least once to expand your ramen horizons.

Menya Hanabi - The Original Nagoya Mazesoba Reviews
This restaurant is very popular and the line can get very long. We were really hyped before going to this restaurant as we read the reviews which were kind of disappointed as we eat the noodles. I personally tried their specialty and also the fried chicken but I couldn't really enjoy them both. The noodles is full of raw onions which somewhat took over the bowl as it was the only thing that I taste when I eat the noodle. Giving the fact that I am a big fan of onions in general, this bowl is not for me which was sad. I would suggest the owner to switch to spicy sweet and sour dipping sauce for the fried chicken, not mayonnaise as the chicken is missing the salty and sweet flavor and it tastes super bland...Though, the customer service is decent and the atmosphere is fine. Maybe it was me and my family were being picky but we all did not like it and this was our first time trying ramen this style with no broth. But you should try it once to see if it fits your taste.
January 22 · Tien NguyenCredit where credit is due, the food is really good. Everything fried was really crispy. The Karaage had a crispy crust, but the actual meat was juicy. The noodles aren't ramen with soup, but they tend to specialize in more Tsukemen style noodles (gravy, instead of broth). Staff was professional in front of you at least. Personally, I'm not a fan of the decor, but I'm sure there are people that will like it.
May 02 · 龔振勝Mazesoba is definitely the highlight of the restaurant. We tried a few different variations, and all were unique and flavorful. The regular ramen is decent, but not particularly standout. Note: The mochi noodles taste the same as the mazesoba noodles…
February 10 · XYThis place specialize in dry Ramen noodle. It’s very tasty and flavorful, I find it a little bit too flavorful for my liking but it’s still good. Their chicken karage was the best I ever had, fries I order was mediocre. Overall, it is a good place to try for people who love Ramen and want to try a dry version.
February 02 · Arn014 WMcDonald's might have provided better service. At least my number would be called when the food is ready. This place they need you to order online while seated inside at a table. Then no confirmation whether the order was received. You just sit and wait. Or maybe sit and pray the food will show up.With that said, our wait was long, no status or visit by staff. We got water and utensils upon seating. I ordered the house/original noodle given almost everything were about the same. Food showed up after 20 some minutes but it was worth the wait. The menu said soup costs extra and I didn't know WTF?! The soup for noodle soup costs extra? But then the noodles were dry stir type where just enough sauce kept them tasty. No soup. Almost stirred the left over mayo sauce from the fried chicken into the noodles.Glad that wasn't needed as the noodle sauce was good. The noodles were a heavier weight almost udon type noodle with more starchy texture. It's dense when you take big bites and chew. It was tasty. Prices are average nowadays. $16 and up. Tips are still expected unfortunately. Is this really how customers are served wherever this place was originated? If so, this is super authentic... After a comparison , we figured out the "delux" noodle had an extra egg. Not much else.
