This unique approach empowers guests to become the "doctors" of their own ramen, prescribing the perfect combination of ingredients. This customization extends to various elements, including:
- Noodle thickness: Customers can choose between classic thin noodles and thicker noodles.
- Noodle firmness: Options range from very firm to very soft, ensuring the perfect chewiness for every palate.
- Broth richness: Diners can select from light, standard, rich, or extra rich broth, and also specify the amount of lard.
- Spiciness: The level of spiciness can be adjusted from none to extra, with a mild spice often recommended for a balanced flavor.

The features of Ramen DANBO Capitol Hill revolve around its commitment to high-quality, authentic ramen. The cornerstone of their menu is the signature Tonkotsu broth, made daily in-house with specially treated water to ensure purity and a consistently delicious umami flavor. This rich and satisfying pork broth is the foundation for various ramen types:
- Classic Ramen: Their signature pork broth ramen, typically topped with pork slices and green onion.
- Miso Ramen: A flavorful ramen featuring a miso-based broth, often with pork, green onion, and leeks.
- Shio Ramen: A simple, mild sea salt ramen, offering a lighter yet equally flavorful option.
- Negi-goma Ramen: Crafted with white sesame oil and sesame seeds, providing a distinct nutty aroma and taste.

For beverages, they offer a selection of soft drinks, as well as bottled and draft Japanese beers like Asahi, Sapporo, and Kirin, and even cup sake. Seasonal ramen options, such as Curry Ramen and Tomato Ramen, are also occasionally available, adding variety to their well-loved staples.

Ramen DANBO Capitol Hill Reviews
We had to wait for around 40-45 minutes to be seated in as it was very crowded over the weekend. The miso ramen bowl was delicious. I would recommend getting the ramen with mild spice which tasted better. I ordered a medium spicy ramen which was a bit more than I could handle and I couldn't finish the broth entirely. Vegan Ramen comes with 2 fried pieces of tofu by default. Atsuage ramen will have 4 more pieces. You will be given a note where you will have to select your ramen specifications and hand it over to the staff once you are seated. The Gyoza tasted very good too!
April 08 · nisha sridharDanbo Ramen is a must-visit spot for authentic, flavorful ramen in Seattle. The Miso and Classic broths are rich, satisfying, and packed with flavour, while their vegan options are surprisingly delicious and thoughtfully crafted. The noodles are perfectly chewy, and you can customize everything to your liking. They don’t take reservations, but it’s absolutely worth waiting in line for. The cozy atmosphere adds to the experience, and there’s paid parking conveniently located nearby. If you're craving high-quality ramen, Danbo consistently delivers one of the best bowls in the city. Simple, satisfying, and worth every minute.
April 28 · Venkata Sindhu KandulaRamen Danbo is hands down my favorite spot for Tonkotsu-style ramen! Every bowl is rich, flavorful, and perfectly balanced — the broth is creamy and savory without being too heavy, and the noodles have that ideal chewiness I love. You can customize everything from noodle firmness to broth richness, which makes the experience even better. The chashu pork melts in your mouth, and their spicy ramen adds just the right kick. I’ve tried a lot of ramen places, but Ramen Danbo always keeps me coming back. Highly recommend if you’re a Tonkotsu fan like me!
April 19 · Brian SweeneyI had the vegan ramen and it was good. Spice levels are pretty accurate, not too spicy. Wish I got a 4/5 spice instead of 3/5. The place is small and the seating is primarily for 1-2 people, so it was a ~50 minute wait for a group of 4. You’ll order using a small sheet, marking what you want! Then you’ll hand it to the staff when seated.
May 14 · Tina OMFantastic ramen spot in Seattle. Stopped by for dinner on a Saturday evening around 7:30 PM and it took as an hour to get our tables. While in line there are the customized menus they hand out for you to pick your order and food comes out really fast.We ordered the Negi gona ramen with rekkarise. Its amazing how they let you customize noodles thickness/firmness, thickness/richness of broth and karadare (umami spicy sauce). If required you can add additional ramen toppings as well. We enjoyed the sapporo as it paired really well with our ramen. The miso ramen with tofu was also delicious. This place is good for vegetarians as well.Is it worth the wait - absolutely yes! The place is small so wait times on weekends can be alot but its worth it. I will stop by again to satisfy my ramen cravings. Highly recommend.
