With locations throughout Orange and Los Angeles counties, Shin-Sen-Gumi has been a mainstay at Woodbury Town Center where many of its former neighbors have unfortunately gone out of business. The staff is always very welcoming and efficient with seating and orders. The menu offers everything from cold/hot/fried appetizers, udon and ramen to rice dishes. On our recent visit, I tried the Spicy DanDan Men off their seasonal menu. It's described as a "Hakata Tonkotsu Ramen w/ rich spicy sesame miso flavor, topped w/ seasoned ground pork & beef, shredded chili pepper, cilantro and green onion." The broth was flavorful but IMO not spicy enough (although admittedly my heat tolerance is high). I wasn't given the option to customize the ramen set-up so the noodles weren't to my liking and I felt like they skimped on the pork & beef inclusion. Overall it wasn't my best choice of ramen but I know they have better options on their menu. I also supplemented my meal with a Soboro Bowl which is always a favorite. I also recommend trying the Nan Kara (deep fried chicken cartilage) if you have the palate for it. Features / Highlights

Shin-Sen-Gumi – Irvine boasts several key features and highlights that contribute to its long-standing popularity and appeal among locals in California:

  • Long-Standing Reputation and Stability: Established in 1992, Shin-Sen-Gumi has a proven track record. Its Irvine location has been a "mainstay at Woodbury Town Center" for years, indicating reliability and consistent quality, even as other businesses have come and gone.

  • Authentic Hakata Ramen: Their signature Hakata Tonkotsu Ramen is a core highlight. While customization options might vary, the foundational broth is known for its depth of flavor. The presence of a "Soboro Bowl" (minced chicken over rice) as a consistent "favorite" also speaks to the quality of their side dishes.

  • Extensive and Unique Udon Offerings: Beyond standard ramen, their udon menu is incredibly diverse, featuring traditional Dashi-based options as well as unique "Cream Sauce" udon varieties. This wide selection caters to a broader range of tastes and preferences.

  • Wide Array of Japanese Appetizers: The menu includes a comprehensive list of cold, hot, and fried appetizers. Adventurous diners can try unique items like "Nan Kara (deep-fried chicken cartilage)," while classic options like "Hakata Gyoza" offer broader appeal.

It's important to note that while the core offerings are generally well-received, some customers have experienced fluctuations in consistency or found certain seasonal items less satisfying than their usual favorites. For example, one review mentioned the "Spicy DanDan Men" not being spicy enough for their preference, and a change in the "curry udon" consistency. Prices have also been noted to increase, and size options for udon may have been reduced. However, the strong foundational menu and consistent service usually encourage patrons to return to try other options.
