I came here for dinner with one of my friends one day and we had a great time. We didn't have reservations, so we were seated at the bar. I highly recommend making reservations as this place was PACKED on a weekend night. Service here is amazing. My friend ordered a matcha beer and one of the staff brought out ice cream for us to enjoy it with because it was supposedly amazing—and it was. So so grateful for it!We ordered the agedashi tofu and two bowls of ramen for our food. Everything was delicious. The agedashi tofu was flavorful and a good portion. I love how they had a vegetarian ramen. I got their veggie ramen and loved it. It was flavorful, came with lots of tofu and veggies, and very comforting.     Shirayuki Edo Genroku Junmai is produced using Hyogo Prefecture Yamada-Nishiki sake brewing rice milled to 88% of its original size. The Konishi Family have long been the guardians of old-world brewing traditions as documented in their uninterrupted daily brewing logs that date back to the late 1600s. Shirayuki Edo Genroku is a strong and complex and Junmai (Genshu), with an interesting salty sweetish haze. Dark chocolate, honey, yeast, dried corn as well as lime blossom and wood. It achieves its amber colour from the wooden barrels (taru) in which it is fermented.

    Perle is the first product for Kizakura which made with a wine yeast. Kizakura has a rich history and high skills in the field of making Japanese sake, but this project was very tough and took a long period - 5 years. Even though both wine and sake are fermented products, the fermentation process is totally different. Depending on yeasts, compatibilities with rice differed and we had to find the best yeast that fits together well with rice by ourselves. After repeated uncountable try and error, we finally arrived at the final yeast.
